This cheesecake is our favorite Easter cake. It is super juicy and looks delicious through the rabbit figures to bite.
Children can help a lot here. The Easter bunnies are punctured out of the cake dough at the beginning. Just as you know it from the cookie baking. In the end, the dough bunnies are simply placed on the quark mass and baked along. A step by step instruction makes the implementation of this cake very easy.

Makes the quark mass first.
All ingredients are well stirred together in a bowl.
In a separate stirrup cup you beat the cream stiffly.
This is lifted with the dough scraper under the quark mass.
For the knetteig all the ingredients come into a mixing bowl. Knead the ingredients with the hands or with the kitchen machine.
Then roll out half of the dough thinly with the noodle wood.
Now you are cutting out the Easter bunnies. Depending on the size of the rabbit, each piece of cake will get a hare later. In total, you will need 12 hares. However, you prefer to chop out two hares more if one breaks.
Put the rabbits on the side.
Now knead the remaining dough and roll it out round. It should have at least the size of the spring shape. Now divide the circle with the knife into 4 quarters.
Then you grease your spring shape including the edge. Use margarine, which can be painted well with the brush.
Now put one quarter at a time into the spring form. The dough can stand up slightly at the edge.
So put all quarters in shape. Then you press the interfaces together with your fingers.
Press evenly up the edge with your hands. The edge does not necessarily have to reach to the top of the shape.
Now fill the quark mixture into the dough-lined springform. Distribute the quark evenly in the form. This is best done with the dough scraper.
Now you put the cut out dough Easter bunnies very carefully on the quark mass. Be careful that the rabbits do not sink in.
Spreads the rabbits as evenly as possible on the cake.
Every piece of cake should have a rabbit as much as possible.
Therefore put the rabbits together very closely. Avoid that they overlap, because the cake can then be cut hard.
If all the rabbits are placed on the cake, the cake is ready to bake.
Tip: Do not put rabbits in the middle of the cake, otherwise the cake can be cut very badly.
Release the center!
Bake the cake in the preheated oven at 170 degrees hot air (convection air).
After about 50 minutes you should look for the cake, possibly it already has a nice color and must be covered with a piece of aluminium foil. Then leave it in the oven for another 10 minutes.
Let the finished cake cool in the cake shape! The quark is still very soft in the warm state.
Let it taste good.
