First you make the filling, so you save the rinsing of the mixing bowls.
Add all ingredients for the filling to the thermomix. Stirs the whole: 1 1/2 minutes at level 3-4.
Meanwhile, you hit the cream stiffly with the hand stirrers.
Then fill the quark from the thermomix into a large bowl.
Then add the whipped cream to the quark mass. Slowly lower the cream with a dough scraper.
Then you put the quark mass aside.
Tip: Shake every now and then at the bowl, so that the air bubbles in the quark mass rise upwards. Because there is too much air in the dough, then the cake tears when baking!
Now you put the ingredients for the dough in the mixing pot. You don't need to rinse it off beforehand.
Knead all ingredients into a dough. To do this, switch the Thermomix 1 1/2 minutes to level 3.
While the dough kneads, grease the spring shape with margarine. Use a brush and spread about 1 tablespoon of margarine.
Then spread out the shape with about 2 tablespoons of breadcrumbs or ground almonds.
Spoon the bread crumbs into the cake shape and shake the shape back and forth - just like when sifting sand. Don't forget the edge!
Tip: If the cake shape is best kept over the sink, the excess bread crumbs can fall into the sink.
The edge and the floor should be evenly covered. You then tilt out all non-sticking bread crumbs.
Then take the dough out of the mixing pot and form an even dough ball. The dough is very soft!
Then dust out the work surface and the dough with some flour. Attention: do not use too much flour, the dough should remain soft and supple!
Now roll out the dough as round as possible. The dough should be a little bigger than your jumping shape.
Then divide the dough into four quarters. It is much too unstable and too soft to put it into shape as a whole.
Then put one quarter after the other in the cake shape. The dough is slightly up at the edge.
If that doesn't work, press the dough with your fingers into the shape. The edge is about two centimetres high.
If all four parts are in shape, then you connect the dough pieces by pressing them together with your fingers.
Then push the edge of the dough slightly upwards with your hand.
This is what the dough looks like in the form.
Now pour the quark into the spiny form.
Shakes again the whole form back and forth, so that existing air bubbles can still escape.
Place the cake in the oven preheated to 180 degrees (hot air) and bake it for about 60 minutes.
Make sure it doesn't get too dark. After 50 minutes, check how bright it is. If necessary, cover it with aluminium foil for the last 10 minutes.
Then let the cake cool in the form. After about 1 hour you can loosen the edge from the shape.
Serve the cheesecake very fresh.
