At the moment, the dandelion flowers are laughing at us, so it's time to make a dandelion honey.
We do it ourselves and not the bees! All we need is dandelion blossoms, sugar, water, oranges and rosemary. Try it out! It's easier than you think and is so delicious!
In sunny and dry weather you gather dandelion blossoms.
On a dishcloth, you pour out the dandelion flowers outside and wait about 30 minutes. So small insects have the chance to save themselves.
Now you can pick out the yellow dandelion flowers.
Then cut the oranges and rosemary small.
Now the dandelion blossoms, oranges, rosemary and the water come into the pot. Take so much water that everything is covered with water.
Everything has to last two hours.
Then you have everything boiled up and then cooled down. Overnight you let everything move in a cool place.
Then you filter the dandelion flowers using a sieve.
Now put the sugar in the filtered dandelion water.
Now let the dandelion water boil up briefly with the sugar and then simmer on a lower level. Let it simmer until the liquid begins to pull threads.
That takes about an hour or more.
To check if the liquid has simmered long enough, you pour some liquid with a teaspoon onto a cold plate.
When the liquid begins to become solid, like a jelly, then the dandelion honey is perfect.
Now you can fill the dandelion honey in jam jars.
